UK cottage cheese sales boom as social media craze drives demand

Influencers’ inventive recipes for high-protein dairy product have boosted trade by 40% for one producer

If you peered into a UK fridge in the late 1970s, it is more than likely you would have found a pot of cottage cheese tucked between the prawn cocktail and sherry trifle.

A popular “diet food” at the time, demand waned in subsequent decades as the high-protein, low-fat wonder food fell out of fashion. But 50 years on from its heyday, cottage cheese is making a comeback in the UK, and has become an unlikely hit with health-conscious Gen Z.

Driven by a wave of social media influencers sharing inventive recipes for the dairy product, which is made from milk curds, UK retailers are reporting significant increases in sales, while producers are struggling to keep up with demand.

“It’s come from absolutely nowhere,” said Robert Graham, managing director of Graham’s Family Dairy. “Since May of last year, when there was a TikTok craze that went on, cottage cheese sales for us are up 40%.”

The company said the growth in production, the equivalent of an extra 2m kilograms a year, means it is looking at ways to increase output, including an initial growth plan to invest £5m to bolster its production facilities.

“We are considering new factories because cottage cheese production is almost full,” said Graham, whose company supplies big retailers such as Co-op, Morrisons and Aldi.

Dairy company Arla is also benefiting from the cottage cheese rush, reporting a double-digit increase in sales in the last three months, while Marks & Spencer experienced a 30% increase compared with last year, and Waitrose reported a 22% year-on-year rise.

Last month, at a gathering at New York University, a group of prominent biologists and philosophers widened the perimeter of a very exclusive club. They declared that there is “a realistic possibility” that insects, crustaceans and fish experience consciousness. This was an expansion of an earlier declaration, made in 2012, in which researchers asserted that mammals and birds were capable of intentional behaviour and had all the physical markers of conscious states: “Consequently, the weight of evidence indicates that humans are not unique in possessing the neurological substrates that generate consciousness,” they concluded. The official consciousness list – or “realistic possibility of consciousness” list – now includes “all vertebrates (including all reptiles, amphibians and fishes) and many invertebrates (including, at minimum, cephalopod mollusks, decapod crustaceans and insects)”.

Lizards have been shown to learn how to navigate mazes, suggesting behavioural flexibility, an often-used marker of intelligence. Bees are able to distinguish between styles of art; engage in play; and perform an elaborate, symbolically rich “waggle dance” that tells their hive mates precisely how far and at what angle to the sun to fly to find food. Scientists suggest bees may have the capacity to feel, perhaps denoting consciousness.

Imagine a world in which you can do transactions and many other things without having to give your personal information. A world in which you don’t need to rely on banks or governments anymore. Sounds amazing, right? That’s exactly what blockchain technology allows us to do.

It’s like your computer’s hard drive. blockchain is a technology that lets you store data in digital blocks, which are connected together like links in a chain. 

Blockchain technology was originally invented in 1991 by two mathematicians, Stuart Haber and W. Scot Stornetta. They first proposed the system to ensure that timestamps could not be tampered with.

A few years later, in 1998, software developer Nick Szabo proposed using a similar kind of technology to secure a digital payments system he called “Bit Gold.” However, this innovation was not adopted until Satoshi Nakamoto claimed to have invented the first Blockchain and Bitcoin.

So, What is Blockchain?

A blockchain is a distributed database shared between the nodes of a computer network. It saves information in digital format. Many people first heard of blockchain technology when they started to look up information about bitcoin.

Blockchain is used in cryptocurrency systems to ensure secure, decentralized records of transactions.

Blockchain allowed people to guarantee the fidelity and security of a record of data without the need for a third party to ensure accuracy.

To understand how a blockchain works, Consider these basic steps:

  • Blockchain collects information in “blocks”.
  • A block has a storage capacity, and once it's used up, it can be closed and linked to a previously served block.
  • Blocks form chains, which are called “Blockchains.”
  • More information will be added to the block with the most content until its capacity is full. The process repeats itself.
  • Each block in the chain has an exact timestamp and can't be changed.

Let’s get to know more about the blockchain.

How does blockchain work?

Blockchain records digital information and distributes it across the network without changing it. The information is distributed among many users and stored in an immutable, permanent ledger that can't be changed or destroyed. That's why blockchain is also called "Distributed Ledger Technology" or DLT.

Here’s how it works:

  • Someone or a computer will transacts
  • The transaction is transmitted throughout the network.
  • A network of computers can confirm the transaction.
  • When it is confirmed a transaction is added to a block
  • The blocks are linked together to create a history.

And that’s the beauty of it! The process may seem complicated, but it’s done in minutes with modern technology. And because technology is advancing rapidly, I expect things to move even more quickly than ever.

  • A new transaction is added to the system. It is then relayed to a network of computers located around the world. The computers then solve equations to ensure the authenticity of the transaction.
  • Once a transaction is confirmed, it is placed in a block after the confirmation. All of the blocks are chained together to create a permanent history of every transaction.

How are Blockchains used?

Even though blockchain is integral to cryptocurrency, it has other applications. For example, blockchain can be used for storing reliable data about transactions. Many people confuse blockchain with cryptocurrencies like bitcoin and ethereum.

Blockchain already being adopted by some big-name companies, such as Walmart, AIG, Siemens, Pfizer, and Unilever. For example, IBM's Food Trust uses blockchain to track food's journey before reaching its final destination.

Although some of you may consider this practice excessive, food suppliers and manufacturers adhere to the policy of tracing their products because bacteria such as E. coli and Salmonella have been found in packaged foods. In addition, there have been isolated cases where dangerous allergens such as peanuts have accidentally been introduced into certain products.

Tracing and identifying the sources of an outbreak is a challenging task that can take months or years. Thanks to the Blockchain, however, companies now know exactly where their food has been—so they can trace its location and prevent future outbreaks.

Blockchain technology allows systems to react much faster in the event of a hazard. It also has many other uses in the modern world.

What is Blockchain Decentralization?

Blockchain technology is safe, even if it’s public. People can access the technology using an internet connection.

Have you ever been in a situation where you had all your data stored at one place and that one secure place got compromised? Wouldn't it be great if there was a way to prevent your data from leaking out even when the security of your storage systems is compromised?

Blockchain technology provides a way of avoiding this situation by using multiple computers at different locations to store information about transactions. If one computer experiences problems with a transaction, it will not affect the other nodes.

Instead, other nodes will use the correct information to cross-reference your incorrect node. This is called “Decentralization,” meaning all the information is stored in multiple places.

Blockchain guarantees your data's authenticity—not just its accuracy, but also its irreversibility. It can also be used to store data that are difficult to register, like legal contracts, state identifications, or a company's product inventory.

Pros and Cons of Blockchain

Blockchain has many advantages and disadvantages. 

Pros

  • Accuracy is increased because there is no human involvement in the verification process.
  • One of the great things about decentralization is that it makes information harder to tamper with.
  • Safe, private, and easy transactions
  • Provides a banking alternative and safe storage of personal information

Cons

  • Data storage has limits.
  • The regulations are always changing, as they differ from place to place.
  • It has a risk of being used for illicit activities

What is the difference between Blockchain and a Database?

Generally a database is a collection of data which can be stored and organized using a database management system. The people who have access to the database can view or edit the information stored there. The client-server network architecture is used to implement databases. whereas a blockchain is a growing list of records, called blocks, stored in a distributed system. Each block contains a cryptographic hash of the previous block, timestamp and transaction information. Modification of data is not allowed due to the design of the blockchain. The technology allows decentralized control and eliminates risks of data modification by other parties.

Blockchain has a wide spectrum of applications and, over the next 5-10 years, we will likely see it being integrated into all sorts of industries. The dragon stirs to life as Toby Olié plucks it up by its tail. He spirals it through the air and, quick as ripping off a plaster, tears the creature in two. “Even when he was curled up on the floor,” the puppet designer says, undoing another of the dragon’s joints, “he took up too much space.” Olié sticks the body back together, a little shorter but more malleable now, and the tail wriggles back into being.

Best known for his work on War Horse, Olié is holding a miniature prototype for Haku, a boy who transforms into an enormous serpentine dragon. Haku is one of the leading characters in Hayao Miyazaki’s exquisite animation Spirited Away, which has been adapted into a major stage production. For the last four years, the creative team have been conjuring, tweaking and perfecting Miyazaki’s world of gods and monsters in three dimensions. The full-sized dragon, for whom Olié took inspiration from fan art as well as close studies of the film, is now more than four metres long, with 4,000 hairs inserted individually down his spine, ears that pin back when he’s scared, and a body powerful enough to carry a child on his back as he flies.

In the Cambridge Analytica scandal: a secretive micro-targeting campaign likely to have influenced the Brexit vote. In the Panama Papers and the Pandora Papers, showing how the ultra-rich hide their money from taxes and legal scrutiny.

All these are conspiracies in the true sense: hidden machinations that advance particular interests while causing harm to others. A theory is a rational explanation, subject to disproof. If you accept these scandals are the result of hidden machinations, which they evidently are, you are a conspiracy theorist.

The south-Asia correspondent for Australia’s national broadcaster, Avani Dias, has been forced out of India after her reporting fell foul of the Indian government, in a sign of the increasing pressure on journalists in the country under Narendra Modi.

Dias, who has been based in Delhi for the ABC since January 2022, said she felt the government had made it “too difficult” for her to continue to do her job, claiming it blocked her from accessing events, issued takedown notices to YouTube for her news stories, and then refused her a standard visa renewal.

In the classroom, we’ve been looking at backsliding and the slow corrosion of democratic norms in so-called democratic countries. Meanwhile, what’s been happening outside the classroom in more than 120 universities around the US and the world tells us a more ominous story about democracy.

For two weeks, we focused on the United States; there were lively discussions on political polarization, January 6 and the threat posed by supporters of Donald Trump, as well as how robust or fragile US democracy currently is. Looking at each democracy involved criticism of the state. In the class on Israel, we examined, among other areas, controversial proposed judicial reforms, as well as the incarceration of Palestinian minors held in administrative detention, as examples where democratic values might be defined as absent.

I’m not allowed to testify. I’m under a gag order. I guess, right?

I’m not allowed to testify, because this judge, who’s totally conflicted, has me under an unconstitutional gag order.

I want to stress Mr Trump that you have an absolute right to testify at trial.

That is a constitutional right that will not be denied or abnegated in any way ... It is a fundamental right that cannot be infringed upon ... the order prohibiting extra-judicial statements does not prevent you from testifying in any way.

Hope Hicks, Donald Trump’s 2016 campaign press secretary, broke into tears on Friday while testifying in the ex-president’s New York criminal hush-money trial, hours after she described his complete control over the campaign.

Hicks, who cut a skittish figure in Judge Juan Merchan’s courtroom, is a key prosecution witness. She described Trump campaign staffers’ panic when a recording emerged in which Trump bragged about groping women. “This was a crisis” for his presidential bid, she said, describing the sentiment among the campaign staff.

In losing yesterday to Stuart Bingham in the quarter-final of the World Snooker Championship, Ronnie O’Sullivan proved himself a contender for the world’s most sporting sports star. He may have lost, but in doing so he showed there are still standards in public life, and some people do care about doing the right thing. Not something we see often these days.

Here’s what happened. Yesterday afternoon, with Ronnie leading by six frames to five, he potted a black ball. When it was returned to its spot, it should have obstructed his next red ball, making it trickier for him to progress. But there was a tiny divot on the table, and the black ball wobbled ever so slightly from its spot, making access to the red simple. Ronnie wasn’t having any of it. He asked the ref time and again to replace the black to make it more difficult for him. But the black wasn’t having any of it either, and kept bobbling away.

Following the Julian rather than the Gregorian calendar, the Russian Orthodox Church (ROC) celebrates Easter this weekend – the most important religious festival of its liturgical year. One priest who will not be leading a service is Dmitry Safronov, a prominent Moscow cleric. In March, Mr Safronov presided over a memorial service at the grave of Alexei Navalny, following the dissident’s death in unexplained circumstances in an Arctic penal colony. He was subsequently suspended from the priesthood for three years and can no longer preach or wear a cassock.

Such is the degraded state of the ROC under the leadership of Patriarch Kirill, the theological cheerleader for Russia’s blood-soaked campaign to reintegrate Ukraine into “Holy Rus”. Kirill’s ever more strident backing of Vladimir Putin’s illegal war led Pope Francis to warn him against becoming “Putin’s altar boy”. But his role in sustaining support for the Kremlin’s neo-imperial ambitions, and justifying repression at home, is far more senior than that.
